The story tells that Margherita Pizza was invented by Raffaele Esposito, the best pizza maker of the period, in occasion of the visit of Queen Margherita, the wife of Umberto I the King, Savoia dynasty in the 1889. This is the first PIZZA ever produced in the world.
As for tradition still today the Neapolitan pizza is cooked in firewood ovens with a cooking temperature of 485 °C required for getting the true Neapolitan pizza. It’s very important the pizza is uniformly cooked on all its circumference and the cooking times haven’t to be more than 60-90 seconds. Only the traditional Neapolitan MANNA ovens thanks to the used construction materials and its right proportion of the dimensions guarantees the above mentioned cooking criteria.
